When we are on the road and Mummy wants to fix a really quick breakfast on a travel day (like today) she likes to fix this avocado toast for her and Daddy. One recipe makes 2 slices and it is really healthy too! It will hold them over until we can stop somewhere for lunch or until we arrive at our next campsite. I think you will like it.
1 ripe Haas Avocado – mashed up smooth
1/8 teaspoon garlic powder
dash of sea salt
1 Tablespoon chopped cilantro
1/2 teaspoon lemon juice
water to thin if needed
cherry tomatoes – halved
whole grain bread – 2 slices toasted
Scoop out the avocado meat and mash in a small bowl until smooth. Add the garlic powder, sea salt and chopped cilantro. Stir in the lemon juice. If it is too thick to spread on your toast, then thin it out a tiny bit with a few drops of water.
Spread 1/2 of the mixture on 1 slice of toasted bread and top with a few halved cherry tomatoes. Lightly drizzle balsamic glaze across the top of the tomatoes. Repeat with 2nd piece of toast. ENJOY!!!
NOTE: If you don’t have any balsamic glaze you can make your own by reducing down some balsamic vinegar in a small saucepan. Just boil it for a few minutes until it gets to a thickened consistency and save any leftovers in a small covered container in the refrigerator for future use. Keep a close eye on this while you are boiling it… it can boil down too far and get waaaaay too thick!!!
