Lemon and Dill Tilapia in Parchment

4 (5 ounce) fresh tilapia fillets
1 teaspoon salt
1/2 teaspoon pepper
2 lemons, sliced
1/4 cup ground or shredded carrots
2 Tablespoons fresh dill, chopped
2 Tablespoons fresh parsley, chopped
2 Tablespoons butter, chopped into small pieces

Preheat the oven to 375 degrees. Sprinkle the tilapia fillets with salt and pepper. Cut 4 pieces of parchment paper into 13 x 13-inch squares. Place 3 lemon slices down the center of each parchment square and then top with a fish fillet. Sprinkle each fillet with the carrots, dill and parsley…and then top each fillet with dots of the butter.
Fold one side of the parchment paper over the top of each fillet and tuck any excess under the fish, then fold over the other half. Fold up the ends and then turn the little parchment over and place on a baking sheet.
Bake at 375 degrees for 20-25 minutes or until the fish flakes with a fork…I baked mine for 25 minutes and they were PERFECT! This is a nice healthy meal for anyone to enjoy.
