Are you looking for more easy recipes to make for your family during this quarantine period? Here is a super easy one for you! This one is great for lunch or dinner and you can serve it with a little side salad or some mixed fruit. It honestly takes only minutes to mix up by hand and takes one mixing bowl. You can use a store-bought pie crust or make your own if you prefer… it’s up to you! Daddy LOVES this quiche and Mummy makes it all the time… because REAL MEN DO EAT QUICHE! LOLOLOLOLOL
“Vegetable & Bacon Quiche”
1 (10-ounce) package frozen chopped spinach, thawed and squeezed completely dry! Make sure to squeeze out as much water as you can!!!
5 large eggs, lightly beaten
1 1/2 cups half & half
1 envelope Lipton “Vegetable Recipe Soup and Dip Mix” (2 envelopes come in a box, but you only need ONE envelope for this recipe, save the other for another recipe)
1/2 teaspoon coarse ground pepper
1/2 cup Oscar Mayer REAL BACON PIECES… do NOT use imitation bacon bits. You can make your own bacon bits if you prefer, just use REAL BACON!
1/2 cup shredded sharp Cheddar cheese
1/2 cup shredded mozzarella cheese
1 unbaked 9-inch pastry pie shell… frozen or refrigerated or homemade
Make sure that you have drained your spinach and pressed out as much water as possible. Squeeze out any extra between sheets of paper towels. If it is too wet, your quiche will be soggy.
In a large mixing bowl, whisk your eggs. Stir in the half & half, soup mix and pepper. Add bacon pieces and cheeses… slowly combine the spinach, breaking it up until it is evenly combined. Pour the mixture into your pie shell and place on a baking sheet to catch any drips. You might want to also cover the edges of the pie crust with strips of aluminum foil to keep the edges from getting burned during baking. Bake at 375 degrees for 40-45 minutes or until firm on top and a light golden brown. Let sit for just a few minutes and then slice with a serrated knife. This is super easy to reheat in the microwave and makes a quick lunch for the next day.
